At the same time it can ensure rural development with people at the centre of the process, supporting the incomes of those who rely on agriculture.

Campus Food Waste

The Directorate of Facilities Management and Maintenance proclaims a working program in Universitas Indonesia Waste Management System consisting of sorting, containing, transporting, and recycling processes. Moreover, Faculty of Engineering of UI also applies organic waste management in their perimeter. Vocational Program of UI also educates people through “Green Action” for waste management. 

Furthermore, UI collaborates with the Government of Depok City in waste management and recycling process in order to manage waste inside Universitas Indonesia perimeter. One of its implementations is that 100% of organic waste from the campus is recycled into fertilizers, then used to fertilize the 808,610-meter square soil of the campus.

For example, the wastes in Faculty of Nursing are sorted based on whether it is organic or inorganic material. Plastic bottles are also separated from paper waste. For the laboratory of Faculty of Nursing, the wastes are sorted based on infectious, non-infectious and toxic hazardous materials.

Organic wastes are transported to UI garbage dump for recycling. Each month, Faculty of Nursing transports 30 Kg of food waste to be recycled in the dump. The compost produced as by-product of organic waste recycling is then used on the plants in the faculty area.

Plastic bottles collected in Faculty of Nursing are transported to garbage collector and subsequentially recycled into plastic ore. Meanwhile, paper waste in Faculty of Nursing is shredded in shredding machine and transported to garbage collector for recycling. Used paper in good condition is used as envelopes.

Waste recycling program policy is declared in the Decree of the Dean of the Faculty of Nursing of Universitas Indonesia No.: 5670/UN2.F12.D/HKP.02.04/2018 concerning Implementation of Go Green FIK UI Policy point c, d and k. This policy is socialized to all campus community members of Faculty of Nursing UI.

Student Hunger

2020 has proven to be a hard year for everyone. The world population must face COVID-19 pandemic that greatly affects many aspects of people’s life. As a university, UI has moved fast in driving food sustainability during pandemic time, primarily through researches, seminar, and community service.

During this pandemic time, Universitas Indonesia applies Distance Learning Method. Students and lecturers are not required to attend lectures in campus. However, students living in UI Dormitories do not return to their respective homes. Universitas Indonesia guarantees proper nutrients for them, one of which is distribution of free milk. UI also provides campus security and medical workers in UI Hospital.

Universitas Indonesia organizes a variety of programs to fulfil students’ needs and maintain their welfare. UI Dormitories are equipped with canteen that offers special price for students. UI also manages canteen with selected menu and tenants that meet with cleanliness and comfort requirements in every faculty. During the fasting month, some programs organized by Universitas Indonesia provide free meal for students who break their fasting (iftar meals).

Implemented in various areas at UI, for example, Faculty of Psychology have two canteens that can be visited by staff, students, and visitors of our faculty. These two canteens provide various kind of food and drink with affordable prices for students. In order to support the program concerning students’ food crisis, Tourism Study Program of Vocational Program of Universitas Indonesia also organizes community service program themed “Community Service Socialization Activity: International Culinary Cooking Demo” performed by lecturers of tourism study program and tourism students. Moreover, Makan Siang Sih (Makasih) is a pilot project executed by Adkesma Department of BEM IM, Faculty of Public Health UI 2020 in collaboration with Faculty of Public Health UI lecturers intended to give lunch voucher in the form of electronic money (Gopay) which will be sent to students in need of lunch (section of Bidikmisi recipients and emigrants criteria) and random sampling from Faculty of Public Health students as a whole.

Universitas Indonesia regulates the attendance system and the provision of food allowances for the employees working in the university administrative center as stated in the Rector’s Decree No. 16 of 2017.

Furthermore, the faculty also issues a Dean’s Decree in order to subsequentially support this regulation. It relates to the Minister of Finance’s Regulation No. 72 of 2016 concerning the provision of food allowances for civil servants which supports the means of food supplies for employees and their family members.

Universities need to be able to demonstrate how they contribute to end hunger, achieve food security, improve nutrition, and promote sustainable agriculture.

UI Canteen provides various types of food choices including vegan food such as fruit salad, mixed vegetable, and gado-gado (Indonesian peanut sauce salad). Students, lecturers, and university staff have freedom to choose any food they want. All UI Canteens have been closed since March 2020 due to COVID-19 pandemic.

Universitas Indonesia commits to providing healthy and affordable food choices on campus. ​The regulations related to HSE for UI Canteen are written in UI Rector’s Decree No. 057 of 2017 about the Implementation of HSE Standards in UI Canteen, which was published on December 4, 2017. The following diagram is a series of activities to implement a canteen that reaches the HSE standards in order to apply for the HSE Canteen certification from the OSHE unit (UPT K3L UI).

Before COVID-19 pandemic hit Indonesia, in March 2020, Universitas Indonesia has already carried out HSE training for food handlers or canteen managers. There are 3% (8 stalls) from all of the canteens in UI (301 stalls) in 2020 that have attended the training. From 2016 to 2020, in total, there are 181 stalls who have attended the training. In terms of canteen inspection and laboratory tests from 2016 to 2020, there are 107 stalls (35% of the total) that have performed these activities. 29% of them (32 stalls) have passed the laboratory test and got the certificate of proper hygiene.

For example, Faculty of Medicine UI provides several outlets at the Indonesia Medical Education and Research Institute (IMERI) of Salemba Building. Some of them are food and beverage outlets. Food and beverage outlets are located on the Sky IMERI floor. The goal of this canteen is to provide a variety of healthy food and beverage options at affordable prices for employees, lecturers, students, and visitors to IMERI FMUI.

National hunger

Universitas Indonesia is committed to the priority of eliminating hunger as the SDGs agenda launched by the UN international agencies as a form of a joint world agenda for equal humanity and freedom from hunger. Due to the diverse geographical conditions of each region in Indonesia, more researches are required regarding environmental conditions and usage of appropriate technology. Considering the geographical conditions in Indonesia, it is necessary to prioritize programs in areas prone to drought, or difficulty in accessing water, such as in eastern Indonesia. Likewise, in arid areas, it is necessary to apply sustainable technology and insight into horticultural agriculture that is useful for solving hunger problems. Universitas Indonesia provides assistance and empowerment to local food producers and farmers. Based on the fact that 1.5 billion people are threatened with starvation due to various causes; human conflicts as well as scientific crisis to economic crises, a multidisciplinary work program is needed to combine various scholarships to work together across institutions to eliminate hunger.

Several community service programs related to access to food security knowledge are supervised by UI. For example, 1) Nutrition, food, local and parenting as an effort to reduce stunting are in line with the NTB golden generation program, 2) Biogas power plant from livestock manure for the development of energy-independent livestock, 3) Development of Seaweed Products Diversification through Agent of Change Based on Marine Economy, and 4) Village Commodity Bank Uses Gurami (Osphronemus Guramy) in Bioflok as Catalist for Public Concern for Citarum River Cleanliness in Teluk Jambe Village, East Teluk Jambe District, Karawang Regency

The university organizes community service programs and events where researchers can directly apply their knowledge to assist people under the threat of poverty and hunger. The programs reflect the significance of collaborative efforts to transfer knowledge of sustainable cultivation and environmental management. They also include raising awareness of the significance of local food procurement. All programs connect traditional economic activities including agriculture, animal husbandry and science and technology to maintain food security.

Universitas Indonesia provides access to university facilities to local farmers and food producers to improve sustainable farming practices. The community service and empowerment program related to the Kalilicin Farmer Group in Pancoran Mas District, Depok City, West Java is an ongoing program. There is the continuous empowerment of star fruit farmers who also produce honey products as a derivative of Klanceng bee biopharmaceuticals. This program is tremendously important because it shows how campuses can participate in becoming consumers of local products, as well as sharing education and working with the community to ensure food security for urban communities.

Universitas Indonesia, which is located in an urban area, is truly aware of the dangers of the disappearance of green areas and productive areas that can be useful in providing food and the necessities of daily life for society. Due to the increasingly eroded urban agricultural areas of the community, institutional cooperation is needed as a form of advocating with local food-producing communities.

The community service program in collaboration with manager of Tani Mustika group in East Jakarta with concern for the local environment implements bio pore technique to absorb water into the soil in Jakarta. In addition to bio pore program, students and lecturers of FIK UI organizes an education program for prevention of COVID-19 transmission to the farmers group and PKK women of Kramat Jati, East Jakarta. This education program is executed by giving counsel on what COVID-19 is, its symptoms, and efforts to prevent its transmission by adapting new behavior.

Universitas Indonesia commits to provide healthy food from good food sources. Based on the UI Rector’s Decree Number 057 of 2017, Article 14 states that all ingredients that are processed into finished food and beverages must be of good quality, fresh, and not rotten. The supply of good quality and fresh food ingredients can be done by purchasing local agricultural and livestock products from the nearest local market and. Universitas Indonesia commits to prioritize the purchase of food products from local markets and local agricultural and livestock sources for food served at the campus canteen. UI has developed mikoponik technology (mushroom cultivation system) as a food commodity in Bogor. This innovation can be a source of raw material food.
